Description:	Riccardo Cotarella is regarded as a pioneer in the Italian wine industry. His expertise spans every aspect of winemaking from soil types and irrigation techniques, to blending and fermentation, to international sales and marketing. He is largely responsible for the vast improvement in quality of numerous wines in central and southern Italy, and for bringing worldwide recognition to these regions as premium wine producing areas. Dr. Cotarella preaches a minimalist approach to winemaking in order to preserve the natural qualities of the grapes, thus he advocates minimal filtration and clarification especially for the reds.Made from 100% Merlot grown in varied estate vineyards in Umbria. The wine was aged in French oak barrels for 5 months. This Merlot is unfiltered and exhibits a deep ruby-red color and rich, spicy aromas. Blackberry, white chocolate, roasted coffee beans and vanilla come through on the palate. The finish is long and pleasant. We recommend this full-bodied merlot with spicy dishes and sauces. This is a favorite with lamb.
